Pazhampori ( Banana Fry).



In Kerala,one of the most popular snack is the (Ethakka)Pazhampori.Its a common evening snack,which we can enjoy with a cup of tea.It is the combination of both sweet and salt and it holds a special place in Kerala cuisine.And u will get it in any places like reastaurants,trains,canteens,roadside tea stalls..anywhere!!! The banana used for this is Ethappazham or Plantain..(the ripe version,but I will not prefer too ripe)..Below is how to make it:
Ripe Banana /Plantain -2 nos( slice vertically into small pieces)
Maida / all purpose flour -1 cup
Rice flour - 2 tsp
Cumin seeds - A pinch
Sugar - 1-2 tsp
Salt - Little to taste.
Turmeric powder - A pinch for colour
Oil for deep frying.
                                     
Preparation :
Mix all purpose flour,turmeric pdr,salt,sugar,cumin seeds,rice flour with water to make a thick batter.Mix till all lumps are gone.If the batter is too thick,add enough water...If it is too loose add little maida..And adjust salt and sugar..Dip the sliced bananas into the batter and allow to coat the bananas in sides.
Heat oil in a pan.Put the slices in oil and fry both sides till banana fried well. Keep the fried bananas in kitchen tissues as it helps to absorb excess oil. Enjoy hot pazhampori(banana fry)  with tea...
