Sukhiyan Aka Modhakam

         Sukhiyan is one of the Malayalee's favourite snack..In some places Sukhiyan is also known as Modhakam.It is made of jaggery and Moong beans/ green gram/(cherupayar in Malayalam) which is maida cotted and deep fried in oil..This snack is very common in Kerala.We will get it anywhere Restaurants,small tea stalls,trains etc...Here is the method to make Sukhiyan Aka Modhakam.

Green gram/Moong beans /Cherupayar - 1 cup.
Grated Coconut - 1/2 cup.
Jaggery - 2-3 .
Coconut milk powder - 1/4 cup
Ghee - 1 tsp.
Cumin seeds - 1 tsp.
Maida - 1 1/2 cup.
Water - 1 1/2 cup or as rqd.
Salt - a pinch.
Baking powder - 1/2 tsp.
Egg - 1 ( optional ).
Oil for deep frying.
Preparation :
   For the filling : Cook the green gram in 2 cup of water in a pressure cooker..When cooked,if there is excess water,remove the lid and cook the green gram again till the water gets evaporated.Keep it a side.Dissolve the jaggery in 1 cup water to make a paste..( Do not make it too watery)..
                  Heat a pan ,put 1 tsp ghee, pour the jaggery paste and add coconut to it,,Stir well.Allow it to boil..Then add the cooked green gram and mix well for some time( 15-20 mins) or till it becomes thick..Allow the jaggery paste to mix well with the green gram....stir well continuously. Add cumin seeds and move this to another pan and let it cool.After cooling, (but should be little warm) make lime size balls with the green gram jaggery mix.
  For cotting : Mix maida , a pinch salt,baking powder,coconut milk powder,egg ( optional for pure veges) along with enough water to make a thick batter..Add water to get proper consistency.If you want yellow colour for sukhiyan add a pinch of turmeric powder to the batter...Heat oil in a pan for deep frying..Dip the lime size balls in the maida batter and fry it in Oil till golden yellow colour..It will not absorb excess oil coz we added baking powder...Serve as evening snack with tea...
