Varutharacha kozhi curry ( Chicken in fried coconut gravy )
Varutharacha kozhi curry is an ultimate Kerala dish..It has always been my favourire dish.Varutharacha curry is quite popular in Malabar side of Kerala.And is mainly prepared by adding roasted coconut with spices.This dish tastes great with Naan,Roti,Appam,Idiyappam or Rice.Here it goes my Yummy chicken curry recipe.
Chicken - 1 lb
Onion - 1 (If it the onion is too big 1 is enough, If it is small use 2 or 3 onions.)
Green chillies - 3.
Ginger - 1 tsp.
Coconut - 1/2 cup.
Lemon juice - 2 tsp.
turmeric powder - 1/2 tsp.
chilli powder - 1 1/2 tsp.
Coriander powder - 3 tsp.
garam masala - 1/2 tsp.
Pepper powder - 2 tsp.
Oil - 2-3 tsp.
Salt as rqd.
Few curry leaves and coriander leaves for garnishing.
How to make :
Marinate cleaned chicken pieces with turmeric powder,chilli powder,garam masala,1 tsp coriander powder ,salt and lemon juice.Keep it in refrigerator for 30 mins.Heat a pan , put grated coconut and fry well in medium flame till it gets brown in colour (.Do not let it fry too much)..After it gets brown in colour,reduce the flame then add 2 tsp coriander powder and mix well till the raw smell goes off..Switch off the flame and keep it aside for cooling...After cooling,Grind the coconut well with the pepper powder and little water to make a fine paste.
Heat oil in another pan, add cut onions and saute well. To that add ginger , green chiliies and few curry leaves and saute. Then add the marinated chicken pieces,pour very little water ( 1/2 cup is needed) and mix well..Allow it to boil for 3-4 mins..Then add the coconut paste and mix well.Adjust water and salt if needed..If you want more gravy add some water..Allow it to boil till the chicken mix with the gravy and cooked.Garnish the curry with curry leaves and coriander leaves..Enjoy with Roti,chappathis or rice.
