Beetroot Pachadi
Beetroot - 2 cups.
Shallots - 4-5 chopped.
Green chillies - 3 nos.
Ginger chopped - 1 tsp.
Turmeric powder - 1/4 tsp or a pinch.
Curry leaves- few.
Oil,dried red chillies,mustards seeds.
Curd - 2 cups.
Salt to taste.
Method :
Heat oil in a pan .Splutter mustard seeds with 2 red chillies..Add shallots,green chillies and curry leaves.Saute well...Then add chopped beetroot and ginger,add salt and turmeric powder..Saute well till it fry and the beetroot is fully cooked...Remove it from the flame .When the mixture has become slightly cool add curd to this mix..U can adjust the consistency of the curry by adding more curd..Adjust salt.Serve beetroot pachadi hot with plain rice..
