Kerala Roast Chicken !!!!!!!!!!!!!!
For Marinating Chicken :
Chicken - 1 lb.
Pepper powder - 1 tsp.
Lemon juice - 4 tsp.
Salt as reqd.
Second Marination :
Chilli powder - 1 tsp.
Turmeric powder - 1/2 tsp.
Pepper powder - 1/4 tsp.( optional).
For Making Masala :
Onion chopped - 2 nos.
Ginger chopped - 2 tsp.
Garlic - 7 pods.
Turmeric powder - 1/2 tsp.
Green chillies - 3 nos.
Chilli powder- 2 tsp.
Coriander powder - 1
Garam masala - 1/2 tsp.
Few curry leaves.
Salt as reqd.
Oil for deep frying Chicken..
Preparation:
Marinate chicken pieces with Pepper,salt,and lemon juice..Keep it aside..For the second marination,mix the chilli powder,turmeric powder and pepper powder with water to make a fine paste..Mix this paste with the chicken..Spread this mix all over the chicken..And keep it for 30 mins..
Heat Oil in a pan for deep frying..Put chicken pieces in oil..Let the pieces to cook well and fry till Golden brown.Remove the pieces from oil when it is done..Keep it a side.Use the rest of the oil for making the masala.
Heat a pan or kadai..Pour 4 tsp of oil from the chicken fried pan..Put ginger,garlic and green chillies...Saute well till the raw smell goes...Put chopped onions..cook well till the color changes to golden brown. Add chilli powder,turmeric powder,coriander powder and salt..Mix well..Then add tomatos and put garam masala to it..Mix well till it is cooked..( If u want,U can add a tsp of tomato sauce)..Put few curry leaves to it..Put all the fried chicken pieces and mix well to cover the masala to the chicken pieces..Switch off the flame..serve hot with Roti,Naan and Rice varieties....
